Prepare the oats and oven
- Preheat oven to 375°F and line a 12-cup muffin tin with paper liners or lightly grease the cups.
- In a medium bowl combine 1 cup rolled oats and 1 cup milk, stir, and set aside to soak for 10–15 minutes while you prepare other ingredients.
Prepare dry and wet mixes
- In a large bowl whisk together 1 1/4 cups all-purpose flour, 1/2 teaspoon baking soda, 1 teaspoon baking powder, 1/2 teaspoon fine salt, 1 teaspoon cinnamon, and 1/4 teaspoon nutmeg if using.
- In another bowl whisk 1 large egg, 1/4 cup neutral oil, 1/4 cup plain yogurt (if using), 1/3 cup packed brown sugar, and 1 teaspoon vanilla until smooth.
Combine
- Grate 1 medium zucchini and 1 medium carrot; squeeze the zucchini lightly with a towel to remove large pockets of water but leave some moisture.
- Fold the soaked oats into the wet mixture, then fold in the grated zucchini and carrot.
- Add the dry ingredients to the wet ingredients and stir gently until just combined; do not overmix.
- If using mix-ins, fold in up to 1/2 cup chopped walnuts or 1/3 cup raisins now.
Bake
- Let the batter rest 5 minutes while the oven reaches temperature, then divide batter evenly among 12 muffin cups, filling each about three-quarters full.
- Bake at 375°F for 18–22 minutes, rotating the pan halfway through if necessary; muffins are done when a toothpick inserted near the center comes out with a few moist crumbs and tops spring back lightly.
- Cool muffins in the tin for 5 minutes, then transfer to a wire rack to cool completely.
Notes
Use rolled oats—not instant—for the best texture; soak oats 10–15 minutes to soften. Squeeze zucchini only lightly to retain some moisture; fully wringing it out will dry the crumb. Store at room temperature 2–3 days or freeze individually for up to 3 months.
